Eggplant Omelette (Tortang Talong)

Ingredients:

  • 2 large eggplants
  • 2 eggs

  • 2 tablespoons cooking oil

Instructions:

  1. Prepare the Eggplants:

    • Let them cool, then peel off the skin, keeping the stem intact. Flatten the eggplant using a fork.

  3. Coat and Fry:

    • Heat oil in a pan over medium heat.
